It all started at the tender age of ten, when Chef Aiden's parents would host elaborate Mexican-themed parties for family and friends. It was a spectacle of flavors and aromas, with fajitas, margaritas, tequila, guacamole, and freshly cut limes making appearances on the dinner table. I was captivated by the sensory experience, and from that moment, I was hooked on the world of culinary delights.

History

Years later, I opened my first Mexican restaurant in Port Elizabeth, South Africa. Nestled in the heart of the city, it was a cozy thirty-four-seater with a kitchen no bigger than a food truck. While the concept and flavors centered on Mexican cuisine, it was by no means an authentically Mexican restaurant. I served traditional Mexican classics while also drawing inspiration from global influences, especially from my home country, Mzansi.
